- 2 avocados, diced
- 2 peaches, cut into bite size pieces
- 2 oranges, cut into bite size pieces
- 1/4 red onion, diced
- 2 tablespoons coconut flakes
- 2 tablespoons balsamic vinegar
- 1/4 cup orange juice
- 2 teaspoons sugar
- 1/4 cup plain yogurt
- Salt and Pepper, to taste
In a large serving bowl, add the first five ingredients. In a small bowl, mix together the vinegar, juice, sugar, yogurt, salt and pepper. Pour into the large bowl. Gently toss. For the best flavor, cover and refrigerate for at least 2 hours.
