- 1 teaspoon olive
- 2 clove garlic, minced
- 1/2 cup preserves, sugar-free raspberry, blueberry or strawberry
- 1/4 cup balsamic vinegar
- 4 chicken breasts, boneless, skinless
- 2 tablespoons parsley, chopped
- No Salt Seasoning and pepper, to taste
Preheat oven to 350 degrees. In a small saucepan, heat oil and garlic; saute for 1 minute over medium-high heat. Add berry preserves, balsamic vinegar, no salt seasoning and pepper. Bring to a boil, then simmer 3-5 minutes or until mixture gets a glaze-like consistency.
Reserve half of glaze and set aside. Brush chicken breasts on both sides with remaining glaze. Coat a baking dish with cooking spray. Place chicken breasts in dish and bake 20-30 minutes depending on thickness. Pour remaining glaze over chicken breasts. Garnish with parsley.
