- 1/2 cup fresh or thawed frozen corn, drained
- 2/3 cup black beans, rinsed, drained (optional)
- 1 large carrot, diced
- 1/4 cup cilantro, chopped
- 1/2 cup prepared chunky salsa
- 2 green onions, thinly sliced
- 1/2 jalapeno, diced (optional)
- 2 large avocados, cut in half and seeded
- 1/4 cup tortilla chips, crushed
- Salt and Pepper, to taste
In a bowl, combine corn, beans, carrots, cilantro, salsa, green onion, jalapeno, if using, salt and pepper; stir together. Fill each avocado shell with 1/4 of the mixture. Divide tortilla chips amongst the 4 and top each avocado. Serve immediately.
