- 4 tablespoons butter, divided
- 2 apples, any kind, diced
- 1/2 teaspoon cinnamon
- 3/4 cup maple syrup
- 1 large egg
- 5 teaspoons sugar
- 1 1⁄3 cups milk
- 1 cup flour
- 3⁄4 teaspoon baking powder
In a saucepan, melt butter, add apples and cinnamon; cook over medium heat, 5 minutes. Add maple syrup and bring to a simmer.
In a bowl or mixing jug, whisk together egg, sugar and half of milk (2/3 cup). Add the flour and mix well. Add remaining milk (2/3 cup) and baking powder. Beat until smooth.
Pour 2-3 tablespoons of the pancake mixture onto a greased (1 tablespoon of butter) frying pan or griddle brought up to medium high heat. Flip with a spatula when the top is bubbly. Cook the other side for 1-2 minutes or until golden brown. Add remaining tablespoon of butter to pan and make pancakes with the rest of the mixture. Serve pancakes with apple cinnamon syrup on top.
