Fall Salad with Balsamic Vinaigrette (10.12.15)

  • 1 container Earthbound Farms Organic Spinach
  • 2 Granny Smith apples, diced
  • 3 celery stalks, diced
  • 1/2 small red onion, diced
  • 3/4 cup pecans, toasted
  • 3/4 cup raisins or dried cranberries
  • 1 cucumber, peeled, diced
  • 1/4 cup pumpkin seeds, toasted

Vinaigrette

  • 1/4 cup balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • 1/3 cup olive oil
  • Salt and Pepper, to taste

In a large bowl, mix together salad ingredients. In a sealable jar or small bowl, mix together vinaigrette ingredients. Pour desired amount of vinaigrette over salad just before serving. Toss together.
