Pepper Pumpkins (10.27.15)

  • 1 medium onion, chopped
  • 3 garlic cloves, chopped
  • 1/2 small onion, any kind chopped
  • 1 tablespoon chili powder
  • 1/2 teaspoon cumin
  • 1 lb. lean ground beef
  • 4 oz Colby and Monterey Jack cheese, grated
  • 4 medium orange bell peppers
  • Salt and Pepper, to taste

Preheat oven to 400°F.

Saute onions, garlic, green peppers and beef with chili powder, cumin, salt and pepper in a large skillet over medium-high heat. Cook until onions and pepper are soft and beef is browned. Drain, if necessary. Stir in cheese. Keep warm. Cut tops off peppers and carefully remove seeds.

If possible, use a small paring knife to cut through each pepper to create the jack-o-lantern eyes and nose and mouth.

Place peppers upright in oven safe dish. Divide filling evenly between peppers. Place tops on peppers and secure with a toothpick. Bake 20 – 22 minutes or until peppers are softened.
