Ingredients:
- 2 Large Green Tomatoes
- 2 Eggs
- 3 T Parmesan Cheese
- 1 C Seasoned Flour
- 1 C Panko Bread Crumbs
- 4 T Butter
- Smoked Blue Cheese
- Balsamic Glaze
Directions:
Wash and cut tomatoes into ½ inch slices
Season with garlic salt & pepper
In a bowl:
Whip 2 Eggs
Add 3 T Parmesan Cheese
In a second bowl:
½ C Seasoned flour with salt & pepper
In a third bowl:
Panko Bread Crumbs
Dip Tomatoes in Egg Wash, Seasoned Flour, Back to the Egg Wash and coat in Panko Bread Crumbs.
Add 4 T of Butter to a Frying Pan.
Fry Tomatoes on medium-high for 2 ½ minutes on each side (approximately) until golden brown.
Top tomatoes with smoked Blue Cheese & Balsamic glaze.
