Greek Yogurt Onion Dip (12.30.15)

  • 1 tablespoon olive oil
  • 1 cup shallots, chopped (2-3 medium shallots)
  • 1/4 cup water
  • 1 teaspoon Worcestershire
  • 1 cup non-fat Greek yogurt
  • 1/4 cup non-fat milk
  • 2 green onions, chopped
  • 1 teaspoon dried chives
  • No Salt Seasoning and Pepper, to taste
  • Raw Vegetables and Whole Grain Crackers or Bread, for serving

Heat the olive oil in a small skillet over medium heat. Add the shallots, no salt seasoning and pepper. Saute, stirring frequently, until translucent and soft, about 4-5 minutes. Add water and Worcestershire, reduce the heat to medium-low; cook, stirring occasionally, until the shallots are caramelized, 10 to 12 minutes.

Combine the shallots, yogurt, milk, green onions, chives, no salt seasoning and pepper in a medium bowl and stir until blended. Cover and chill at least 1 hour before serving. Serve with cut up raw vegetables, whole grain crackers and/or whole grain bread (pitas, etc.)
