Recipe: Spicy Strawberry Chocolate cupcakes

Paula Iniguez from the Real Housewives of Riverton shared four simple crafts and a delicious cupcake recipe for Valentine's Day.

Spicy Chocolate Cupcakes

1 box chocolate cake mix (I used Pillsbury’sGerman Chocolate mix)
2 egg whites
2 eggs
1 cup milk
1/3 cup unsalted butter, melted
1/2 teaspoon chili powder
1/8 teaspoon cinnamon
1 pinch of nutmeg

1 pinch of ground red pepper flakes (use more if you want your cupcake really spicy)Preheat oven to 350°F.  In stand mixer, add all ingredients and mix until well combine.  Don’t over mix.  Fill cupcake liners with 3 oz of batter.  Bake for 15-20 minutes.  Cool completely before frosting.

Spicy Cream Cheese Frosting

8 oz cream cheese, softened
4-5 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon chili powder

In stand mixer beat cream cheese until smooth.  Scrap down and add vanilla, cinnamon, nutmeg and chili powder until well blended.  Add milk and powdered sugar, one cup at a time until you reach your desired consistency.  Pipe onto cooled cupcakes. To add some Valentine's Day fun to your dessert place a whole strawberry into the center of each cupcake after it has cooled. You can also add sliced strawberry's to the frosting to give it a pink color, just make sure it will not be sitting for too long. Another option is to place a slice of strawberry on the top of the cupcake as a garnish and drizzle Hershey's syrup to finish it off.
