Penny Ann's Cafe created some delicious breakfast nachos using their homemade Pork Chili Verde recipe.
Pork Chili Verde
Ingredients:
- 2 small diced pork
- 1 medium yellow onion diced
- 3 small Serrano peppers diced and seeds removed
- 1 tsp chopped garlic
- 2 16 oz can crushed Tomatillos
- 1 TB chili powder
- 1 TB Mexican Oregano
- 1 TB Garlic Powder
- 1 tsp ground cumin
- 2 cups of water
In a medium pot cook off the pork, onions, garlic and peppers then add all the rest of the ingredients and simmer for 2-2.5 hours. Add salt and pepper to your taste. Then thicken with a roux of butter and Maseca.
To create breakfast nachos you will need:
- Tortilla chips
- Eggs
- Cheddar cheese
- Pork Chili Verde
- Sour cream
- Salsa
