California Chicken Avocado Sliders (4.03.16)

  • 1/2 lb. (2) boneless skinless chicken breasts, cooked
  • 8 rolls, split
  • 1 large avocado, halved, pitted
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 4 pieces of bacon, cooked
  • 1/4 cup arugula lettuce
  • 8 thin tomato slices
  • Salt and Pepper, to taste

Slice chicken breasts into 8 small pieces that will fit on the rolls. In a medium bowl, mash avocado. Add mayonnaise, mustard, salt and pepper. Spread on the inside of each bun. Top with chicken slices, bacon, lettuce and tomato. Serve immediately.
