Tropical Banana Bread
Ingredients:
- 1 cup unsalted butter, softened
- 2 cups sugar
- 4 eggs, room temperature
- 2/3 cup crushed pineapple, drained
- 1 cup ripe banana, mashed
- 1 cup coconut flakes
- 4 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
Directions:
Preheat oven to 350°F. In medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside. In stand mixer, cream together butter and sugar. Beat in eggs, one at a time. Reduce mixer speed to low and stir in crushed pineapple, bananas, and coconut flakes. Add flour mixture and mix until just combined. Divide into two greased 8 x 4 loaf pans. Bake for 65-70 minutes until done. Cool in pan for 5-10 minutes, then cool completely on wire rack. Top with glaze and toasted coconut flakes.
Tropical Glaze Ingredients:
- 1/2 cup pineapple juice
- 2-3 cups powdered sugar
Directions:
Whisk together until smooth, spoon over cooled bread, top with toasted coconut flakes. For thicker glaze, add more powdered sugar. For thinner glaze, add less powdered sugar.
