Cracked Wheat Salad
1/2 cup fine-cut bulgur
2 lemons, halved
4 bunches fresh flat-leaf parsley, leaves removed
2 bunches fresh mint, leaves removed
2 tomatoes, halved horizontally
2 mini cucumbers
1/2 cup chopped Kalamata olives, optional
6 green onions, chopped
1/4 cup extra-virgin olive oil
Middle East red pepper
In a medium bowl, add the bulgur. Squeeze each lemon half over the bulgur and stir to combine. Let soak for 30 minutes and stir again to combine.
Meanwhile, mince the parsley and mint and add to the bulgur.
Using your fingers, remove and discard the seed pods and stem. Dice the tomatoes and add to the bowl. Cut the cucumbers in half lengthwise. Cut the halves in half again and cut into small pieces. Add to the bowl and add the olives, if using, and the green onions.
Drizzle the vegetables and herbs with olive oil and season with salt and Middle East red pepper and toss to combine. Let the salad rest for 30 minutes prior to serving.
