Egg, Bacon and Two Cheese Breakfast Bagels (04.22.16)

  • 4 bagels, plain, whole wheat, anything or onion flavor, split
  • 4 oz. cheddar cheese, shredded
  • 4 large eggs
  • 4 ounces cream cheese, softened
  • 4 tomato slices
  • 8 bacon sliced, cooked
  • 4-6 basil leaves, torn
  • Salt and Pepper, to taste

Preheat oven to 350 degrees F.

Lay each bagel half on a large baking sheet. Toast for 3-4 minutes. Add cheddar cheese to one half of each bagel. Bake another 1-2 minutes. While baking, in a skillet, cook eggs, with salt and pepper, over easy. While still warm, spread the cream cheese on the other half bagel. Top each bagel with a tomato slice, an egg, 2 slices of bacon and a few pieces of torn basil. Top the bagel with the other half. Cut in half; serve immediately.
