All American Burger
Serves: 4
Prep Time: 15 Minutes
Cook Time: 15-20 Minutes
Total Time: 35 Minutes
¾ lbs.Lean Beef
¾ lbs. Ground Lamb
1 ½ teaspoon Fresh Thyme
To Taste Salt
To Taste Black Pepper
½ Cup Mayo
2 Tablespoon Pureed Sundried Tomatoes
1 teaspoon Garlic
4 Slices Smoked Cheddar
4-5 Beets Roasted, Peeled, Rondelle
¼ Cups Cider Vinegar
1 Tablespoon Sugar
½ teaspoon Dry Mustard
To Taste Salt & Pepper
Fried Onions to Garnish (See Recipe)
Micro Greens to Garnish
Combine first 5 ingredients and just barely incorporate. Don’t over mix. Form patties and bake or grill. Combine Mayo, tomatoes and garlic in a medium bowl, mix well and set aside. Combine cider vinegar, sugar, dry mustard, salt and pepper in another bowl. Emulsify and toss with beets. Allow beets to sit for at least 30 minutes. Prepare onions as directed. Slather both buns with the aioli. Place your cooked burger with melted smoked cheddar on the bun followed by pickled beets, fried onions, and micro greens to finish. Serve and enjoy!

Beer Battered Onion Rings
4 Sweet Onions
1 Cup AP Flour
12 ounces Lager style beer
2 teaspoons Cornstarch
1 teaspoon Salt
1 teaspoon Black Pepper
Combine all ingredients except onions. Slice onions, batter and fry.

Korean Burger

Serves: 4
Prep Time: 15 Minutes
Cook Time: 10-15 Minutes
Total Time: 25 Minutes
½ Cup Mayo
2 Tablespoons Gochujang
1 teaspoons Fresh Garlic
½ teaspoons Sesame Seeds
1 ½ Pounds Ground Beef 80/20
6 ounces Kimchi Chiffonade & Sauteed
6 ounces Enokitake, Roasted & Whole
TT Salt
TT Pepper
Spinach, Fresh – Garnish
Bean Sprouts – Garnish
Fried Egg – Garnish
Combine the first 4 ingredients in a small bowl and set aside. Combine the beef, kimchi, enokitake, salt and pepper in a medium bowl. Lightly mix until just barely incorporated and form 4 patties. Bake or grill off and serve on your choice of bun with bean sprouts, spinach, and fried egg.
