1/4 cup honey
1/2 cup graham crackers, crushed
3 cups strawberry or vanilla ice cream
2 1/4 cups strawberries, trimmed, divided
1 teaspoon vanilla extract
1/2 pound cake, cup into small bite size pieces
1/4 cup blueberries
Set 6 glasses out. Pour the honey and graham crackers on two separate plates. Dip the rim of each glass in the honey, then the graham crackers, pushing down to coat the entire rim.
In a blender, add ice cream, 2 cups of the strawberries, vanilla and pound cake pieces. Blend until smooth. Pour into glasses. Slice the remaining 1/4 cup of strawberries. Divide amongst the glasses. Garnish each glass with the sliced strawberries and blueberries. Serve immediately.
