Recipe: The Mighty Baker’s Buche de Noel

Recipes:
Milk, Dark or White Chocolate Whipped Ganache
100 grams chocolate
100 ml heavy cream
- Place desired chocolate in a glass or metal mixing bowl, set aside
- Pour cream in saucepan on low heat
- Pay close attention and stir frequently
- Remove cream from stove when it reached a bare boil and you see bubbles forming around edges
- Pour hot cream over the chocolate and let sit for a moment
- Stir with spoon and stir till completely smooth, if you have a hand mixer this will speed up the process
- Let sit at room temperature till it cools
- Place in fridge for at least 8 hours or overnight
- Put refrigerated ganache in mixing bowl and whip using the paddle attachment
- Whip till it thickens to a spreadable frosting consistency, do not over beat, may get grainy.
Yule Log (Buche de Noel)
- Bake a half sized sheet cake of your favorite chocolate or other cake recipe. You will receive better results if you use one more moist and firm cake recipe. For instance, if you're using a box cake mix, add a box of pudding and an extra egg and you will get a more moist cake that will hold up better to this recipe.
- Let cool until room temperature
- Lay out plastic wrap on a table
- Place sheet cake on plastic wrap
- Spread your whipped ganache or chocolate frosting or other desired filling on sheet cake that you have placed on the plastic wrap
- Spread evenly and then roll it into a cake roll slowly using the plastic wrap as your help
- Wrap tightly and place in fridge to cool
- When cool remove from fridge and then cut off an end about 3-4" and place on top of the remaining cake roll, this will be your stump
- Using the ganache frost the cake roll and cover it completely and then using an icing spatula put a wood design on the cake
- Dust with powdered sugar
- You can now customize your yule log with whatever you like; toadstool mushrooms, flowers and more.
