Smith's Chef Jeff Jackson shared a comfort food recipe for One Pan Chicken Parmesan Pasta.

Ingredients
3-4 trimmed chicken breasts, cut into bite-size cubes
Salt and pepper to taste
2 tbsp. Italian dressing
1 lb. dried pasta (rigatoni, penne, farfalle)
24 oz. bottle favorite marinara sauce
3 c. chicken broth or water
1 c. mozzarella, divided
½ c. parmesan cheese, grated
Salt and pepper to taste
¼ c. chopped fresh basil

Directions
1. Season the chicken with salt and pepper to taste. Heat the Italian dressing in a large skillet over med-high heat. Cook the chicken 3-5 minutes until browned but isn`t completely done.
2. Add the uncooked pasta, marinara, and chicken broth. Stir to combine. Bring it to a boil and reduce to a simmer. Cook 8-10 minutes or until the pasta is done to your liking.
3. Stir in the parmesan and ½ c. of the mozzarella. Once the cheese is melted, sprinkle the rest of the mozzarella over the top and cover with a lid. Let it sit a few minutes or until the cheese is melted. Serve warm with some garlic bread and maybe a green salad. Enjoy!
