Smith`s Chef Jeff Jackson's Brown Butter Rice Krispies Treats
¾ c. butter (or 1 and ½ sticks)
¼ tsp. kosher or sea salt
10 or 12 ounce package marshmallows
6 c. crispy rice cereal
9x13 baking dished coated with non-stick spray
1. Melt the butter in a saucepan over medium heat. Do not have the heat any higher or it will burn easily. This takes patience but is WAY worth it. Allow it to cook, swirling it around often. It will start to foam. This is normal. As it continues to cook for a few minutes, little brown specs will start to come up in the middle. Give it a stir and continue to cook it until it has a nutty flavor and turns a golden brown, not black.
2. Turn the heat off and sprinkle in the salt. Begin to stir in the marshmallows. The heat in the pan should be enough to melt the marshmallows. Turn the heat on to low if it needs a little help in melting the marshmallows. Pour it over the rice cereal and mix to combine.
3. Press the mixture into the prepared dish. Allow it to cool. Slice and enjoy.
