Refresh your dinner repertoire with this easy recipe from Smith's Chef Jeff Jackson! All it takes is instant rice, a package of chicken tenders, a bar of cream cheese and a handful of other simple items.
Zesty Italian Chicken
1 package chicken tenders or 8-12 pieces
Salt, pepper, and garlic powder to taste
1 tbsp. garlic, minced
1 qt. half and half
2 c. chicken broth
8 oz. bar cream cheese, cut into cubes
2 packets Italian dressing seasoning mix
Juice and zest of 1 lemon
Rice for serving
1. Season the chicken with a little salt, pepper, and garlic powder. Heat a large skillet over med-high heat. Add a little oil to the pan. Cook the chicken 2 or 3 minutes per side, just to brown them. We will finish the cooking process on the chicken later.
2. Add the garlic to the pan and cook for maybe 30 seconds. Be careful not to burn it. Add the chicken broth and half and half. Bring to a simmer. Add the Italian dressing seasoning and cream cheese. Cook until the cheese has melted and the sauce starts to thicken, stirring occasionally. Stir in the lemon juice.
3. Return the chicken to the pan and cook an additional 5-7 minutes or until the chicken is done and has reached an internal temp. of 165. Serve warm over rice.
