Chef Jeff from Smith's joined us with a recipe from his own kitchen.
Sausage Potatoes and Green Bean Foil Packets
1 lb. Kielbasa or other favorite sausage, thinly sliced
1 lb. baby red potatoes, quartered
1 lb. green beans, trimmed
8 oz. Cremini mushrooms, halved
1 small onion, chopped
4 tbsp. butter, divided
4 tsp. Cajun seasoning, divided
4 tbsp. fresh parsley, chopped, divided
Salt and pepper to taste
1. Preheat your grill on high heat. Cut 4 sheets of heavy duty foil about 12 inches long and spray with non-stick spray.
2. Divide the sausage, potatoes, green beans, mushrooms, and onions evenly in the center of the foil sheets. Place 1 tbsp. of the butter on top of each packet. Sprinkle each with ¼ of the cajun seasoning, parsley, and a little salt and pepper. Close each packet trying to seal all the edges.
3. Place on the grill and cook about 8 minutes per side.
4. Serve warm and enjoy!
