At Cucina Wine Bar in the Avenues, Chef Joey Ferran breads his avocados. Why?

According to his recipe, it definitely makes the avocado more interesting!

"We serve it with a spicy and tangy tamarind curry sauce and green chile emulsion," he said.

RECIPE: BREADING FOR AVOCADO

It will take one avocado
1/4 c. of cashew candy
1/2 c. all purpose flour
1 c. of coconut milk
3/4 c. bread crumbs
