Simple Spinach Salad
1 bunch spinach leaves, washed, roughly chopped2 pears, sliced1/4 cup shredded carrots2 stalks celery, sliced1 orange, juice and zest2 tablespoons red wine vinegar2 tablespoons honey or agave1/4 cup olive oil
Combine the first 4 ingredients in a large bowl. In a small bowl, mix together the juice and zest of the orange, red wine vinegar, honey or agave, salt and pepper. Stream in the oil. Toss with the salad. Serve immediately.
