Three Bean Dip (07.25.12)

  • 1 can (15 ounce size) black beans, drained and rinsed
  • 1 can (15 ounce size) kidney beans, drained and rinsed
  • 1 can (15 ounce size) pinto beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 2 cloves garlic
  • 1/4 onion
  • 1/2 green or red bell pepper
  • 1/4 cup fresh cilantro
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 3 tablespoons lime juice
  • 3 tablespoons olive oil
  • Salt and Pepper, to taste

Mix all ingredients in a food processor. Chill for at least an hour for best flavor. Serve with crackers, pita bread and/or a variety of raw vegetables.
