From the Corner Bakery Cafe
Grill mix for 10 paninis:
- 12 oz Quartered artichokes,diced
- 2 oz Pesto
- 8 oz Roasted tomatoes, rough chopped
- 2 lb Grilled zucchini, diced
- ½ tsp Kosher salt
- ¼ tsp Ground black pepper
Mix all ingredients thoroughly
Two slices of Harvest wheat bread
Lightly butter outsides of both slices
Two slices of provolone cheese on each slice (total 4)
Add 5 oz of Grill mix
Add 6-8 leaves of fresh spinach
Place on a Panini grill press until hot, crisp outside and golden brown
