Turkey Reuben Sandwiches (11.29.13)

  • 2/3 cup mayonnaise
  • 1/3 cup ketchup
  • 1/4 cup dill pickle, chopped
  • 1/2 small onion, peeled
  • 8 slices rye bread
  • 8 slices cooked turkey
  • 1 cup sauerkraut
  • 8 slices Swiss cheese
  • 1 tablespoon olive oil
  • Salt and Pepper, to taste

For the dressing, combine the mayonnaise, ketchup, pickle and onion in a small bowl with salt and pepper.

Spread all 8 slices of bread with the dressing on one side. Dividing evenly, the turkey, sauerkraut, and cheese.

Heat the oil in a large skillet over medium heat.

Add the sandwiches and cook, pressing occasionally with the back of a spatula until the bread is golden brown and crisp and the cheese is melted, 3 to 4 minutes per side.
