Italian Chopped Salad (09.15.14)

  • 4 cup romaine lettuce, chopped
  • 4 oz. salami, chopped
  • 4 oz. mozzarella cheese, chopped or shredded
  • 10-12 peppercini rings or olives, chopped
  • 2 celery stalks, chopped
  • 1/2 cucumber, chopped
  • 1/4 cup red wine vinegar
  • 2 tablespoons sugar
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, grated
  • 1/4 cup olive oil
  • Salt and Pepper, to taste

Combine first 6 ingredients in a large bowl. In a small bowl combine the vinegar, sugar, mustard, garlic, salt and pepper. Whisk in the oil. Pour over salad. Mix well. Serve immediately.
