- 1 lb. carrots, shredded
- 8-10 radishes, diced
- 2 celery stalks, diced
- 4 oz. feta cheese, crumbled
- 3 tablespoons lemon juice
- 1/4 teaspoon red pepper flakes
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1/4 cup olive oil
- Salt and Pepper, to taste
Mix first 4 ingredients in a large bowl. Mix lemon juice, red pepper flakes, mustard, honey, salt and pepper in a small bowl. Whisk in olive oil. Pour over vegetable mixture; combine. Chill for at least an hour for best flavor. Stir before serving.
