Baked Sweet Potato Rounds

  • 1/4 cup butter, melted
  • 3 tablespoons brown sugar
  • 1/4 teaspoon cinnamon (optional)
  • 2 medium sweet potatoes, ¼” slices
  • 1/3 cup pecans, chopped
  • 1 cup small marshmallows
  • Salt, to taste

Preheat oven to 400 degrees F.

Mix butter, brown sugar, cinnamon (if using) and salt in a large bowl. Add sweet potatoes and coat completely. Place in a 9 x 12 baking dish. Top sweet potatoes with pecans. Bake for 20 minutes.  Top sweet potatoes with marshmallows. Bake an additional 5-8 minutes. Serve immediately.
