- 1/3 cup cilantro, diced
- 2/3 cup sour cream
- 1 tablespoon chipotle hot sauce
- 1/4 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 cup lime juice
- 4 cups romaine lettuce, chopped
- 2 cups chicken breasts, shredded or diced
- 1 tomato, diced
- 1 avocado, diced
- 1/3 cup red onion, diced
- 1 (15-ounce) can black beans, rinsed and drained
- 1 cup corn
- Salt and pepper, to taste
To prepare dressing, combine first 7 ingredients, stirring well.
To prepare salad, combine lettuce, chicken, tomato, avocado, red onion, beans and corn in a large bowl. Drizzle dressing over salad; toss gently to coat. Top with tortillas bits.
