- 1/4 cup olive oil
- 3 tablespoons fresh lime juice
- 1 teaspoon honey
- 1 teaspoon toasted sesame oil
- 1/2 small Serrano chili, diced
- 1 small head romaine lettuce, chopped
- 2 carrots, chopped
- 1 cup corn kernels
- 1/2 lb. skinless chicken breasts, cooked, shredded
- 1 tablespoon toasted sesame seeds
- 1 cup rice noodles
- 1/4 cup fresh cilantro leaves, torn or chopped
- Salt and Pepper, to taste
Whisk together the oil, lime juice, honey, sesame oil, chili salt and pepper in a large bowl. Add the lettuce, carrots, corn and chicken; toss well. Top with sesame seeds, rice noodles and cilantro.
