- 1/2 cup sour cream
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh dill, chopped or 1 tablespoon dried dill
- 4 cups cucumbers, thinly sliced
- 1 red bell pepper, chopped
- Salt and Pepper, to taste
In a large bowl, whisk together the sour cream, lemon juice, dill, salt and pepper.
Add cucumbers and peppers; toss to coat. Refrigerate for at least 3 hours. Garnish with additional dill, if desired.
