Herb Salmon with Garlic Lemon Spinach
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
- 4 (1 lb.) salmon fillets
- 2 tablespoons olive oil, divided
- 2 garlic cloves, minced
- 1 (6-ounce) package fresh baby spinach
- 1 teaspoon lemon rind, grated
- 1 tablespoon fresh lemon juice
- 4 lemon wedges
- No Salt Seasoning and Pepper, to taste
To prepare salmon, combine first 4 ingredients, plus no salt seasoning and pepper; rub spice mixture evenly over fish. Heat a large skillet up to medium high heat; add 1 tablespoon of oil. Cook salmon on each side for 3-4 minutes or until desired degree of doneness. (Cooking time will depend on thickness of the cut.)
To prepare spinach, heat remaining tablespoon of oil in a large nonstick skillet over medium heat. Add garlic to pan; cook 1 minute. Add spinach; cook for 2 minute, stirring frequently. Add lemon rind, juice, no salt seasoning and pepper.
To serve, divide spinach onto four plates. Top each with a piece of salmon. Serve with 1 lemon wedge per plate to squeeze over salmon.
