Ingredients
- 1 ear of fresh corn removed from husk
- 4 ripe, Fresh Avocados, seeded, peeled, cut in chunks
- 1 Tbsp. lemon juice
- 1/2 small sweet white onion, minced
- 1 ripe Roma tomato, seeded and diced
- ½ small red onion diced
- Salt and pepper, to taste
Instructions
Mash avocados with lemon juice in a bowl, leaving some chunks.
Roast corn in oven at 400 degrees till charred looking
.Gently stir in remaining ingredients and serve with tortilla chips or any type of flat bread
