Family Meal Month: Salmon with veggies and wild rice

Oven Baked Salmon with Roasted Veggies and Wild Rice
Serves 4
Prep Time: 10-15 min
Cook Time: 55 min
4 fillets of Salmon (6oz each)
1 cup dry wild rice
4 cups broccoli
4 cups baby rainbow carrots
3 tbsp. olive oil
½ tbsp. black pepper
¼ tbsp. kosher salt
1 tbsp. fish rub

Cook wild rice according to package directions.
Preheat oven to 425
Use ½ tbsp. olive oil to coat baking sheet.
Drizzle ½ tbsp. olive oil on fish fillets and season with fish rub and place on backing sheet.
Cut broccoli into bite size pieces combine in a bowl with carrots and drizzle with 2 tbsp. olive oil, kosher salt, and black pepper. Place on baking sheet surrounding fish.
Bake for 15-25 minutes (depending on the size of the fish).
