Ham, Broccoli and Goat Cheese Rice Skillet (12.14.15)

  • 2 teaspoons butter
  • 1/2 cup onion, chopped
  • 2 cups ham, cooked, cubed
  • 2 cups rice, cooked
  • 2 cups broccoli florets, blanched
  • 1/4 cup milk
  • 4 oz. goat cheese, crumbled
  • 3 green onions, chopped
  • 1/4 cup parsley chopped
  • Salt and Pepper, to taste

In a large nonstick skillet, melt butter over medium heat. Add onion, salt and pepper. Saute for 4-5 minutes until slightly softened.

Stir in ham, rice, broccoli, milk and cheese. Cook over medium heat, stirring frequently, for 5-6 minutes. Add additional salt and pepper, to taste. Garnish with green onions and parsley. Serve immediately.
