Roast Beef Lettuce Wraps (01.18.16)

  • 1/4 cup rice vinegar
  • 2 tablespoons honey
  • 1 small shallot, diced
  • 1 teaspoon fresh ginger
  • 1 tablespoon toasted sesame oil
  • 1/4 cup olive oil
  • 1/2 head iceberg lettuce, large leaves separated
  • 1/2 lb. Birchberry roast beef, thinly sliced
  • 1 cucumber, chopped
  • 1 large carrot, thinly sliced
  • 1/4 cup cilantro leaves, torn
  • 1/4 cup toasted sesame seeds
  • Salt and Pepper, to taste

In a small bowl, whisk together the first 6 ingredients (through olive oil) with salt and pepper. Fill the lettuce leaves with the roast beef, cucumber, carrot and cilantro. Drizzle some of the vinaigrette over each wrap. Sprinkle with sesame seeds. Wrap all ingredients in the lettuce leaves. Serve immediately.
