- 1 large lemon, juiced
- 1 tablespoon Dijon mustard
- 1/4 cup extra-virgin olive oil
- 2 large grapefruits, peeled, cut into bite size pieces
- 2 large avocados, diced
- 1/2 cup red onion, thinly sliced
- 4 cups romaine lettuce or spinach, chopped
- Salt and Pepper, to taste
Whisk together the first 3 ingredients in a large bowl with salt and pepper. Add, grapefruit, avocado, onion and lettuce or spinach. Toss well. Add additional salt and pepper, if needed. Serve immediately.
