Deconstructed Veggie Burrito Bowls (3.30.16)

  • 2 cups whole grain rice
  • 1 (15) oz can no salt added black beans, rinsed, drained
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 2 cups corn kernels
  • 1 large avocado, cubed
  • 1 large tomato, chopped
  • 2 cups cabbage
  • 1 red bell pepper, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 cup Greek Yogurt
  • 1 cup salsa
  • 1 lime, sliced into 8 wedges
  • No Salt Seasoning and Pepper, to taste

Cook rice according to package directions. Divide rice into four bowls. In a small bowl, mix black beans, cumin, no salt seasoning and pepper. Divide amongst the four bowls with the corn, avocado, tomato, cabbage, pepper, cilantro, yogurt and salsa. Place each item next to each other. Serve immediately with two lime slices per bowl. Add no salt seasoning and pepper, to taste.

Note: Optional to serve with low sodium hot sauce.
