Haley Burke shared her Winter Citrus and Fennel Salad with Pistachios recipe!
This salad is bright and fresh and crunchy and uses all of the best things winter produce has to offer!
Ingredients:
- Handful of watercress or other peppery greens
- 4 Oranges, any variety you like
- 1 fennel bulb, sliced thinly
- 1 fennel bulb, sliced thinly
- 1 lemon
- 2 tablespoons honey
- Salt and Pepper, to taste
- Olive oil
- 1/2 cup salted pistachios, roughly chopped
Method:
Arrange 3/4 of the greens on a platter, top with fennel and radishes. Drizzle on a tablespoon or two of olive oil. Squeeze the lemon over the top and add salt and pepper to taste. Drizzle on half the honey.
Arrange orange slices over the top of the fennel/radish layer. Drizzle remaining honey, a tablespoon or so more olive oil, and salt and pepper, to taste.
Sprinkle pistachios over the top and garnish with remaining greens.
