Queso Dip with a Kick (05.03.13)

  • 1 cup Monterey jack cheese, shredded
  • 3/4 cup cheddar cheese, shredded
  • 4 ounces green chilies
  • 1/4 cup half-and-half
  • 1/4 cup milk
  • 2 tablespoons onions, diced, any kind
  • 1 tablespoon ground cumin
  • 1/2 teaspoon salt
  • 1 Serrano, jalapeno or Anaheim pepper, finely diced
  • 2 tablespoons cilantro, chopped
  • 1 tomato, diced
  • 1/2 avocado, diced

Place the first 9 ingredients in a double boiler and heat on low to medium heat. Cook until melted and well blended, stirring frequently. Garnish with cilantro, tomato and avocado. Serve with fresh tortilla chips or hot flour tortillas.
