Crunchy Salad with Spicy Honey Mustard Dressing (02.16.15)

  • 4 cups romaine lettuce, chopped
  • 1 cup cabbage, shredded
  • 1 tomato, diced
  • 1/2 red bell pepper, chopped
  • 1/4 red onion, diced
  • 2 large carrots, chopped or shredded
  • 2 celery stalks, chopped
  • 3 teaspoons Dijon mustard
  • 3 teaspoons honey
  • 1 tablespoon lime juice
  • 1/3 cup olive oil
  • 1 teaspoon Jalapeno, finely diced
  • 1/4 teaspoon dried thyme
  • Salt and pepper, to taste

Combine the first 7 ingredients in a large serving bowl. Whisk together the Dijon mustard and the next 5 ingredients. Add salt and pepper, to taste. Add desired amount of dressing to salad and toss. Remaining dressing will keep for up to 5 days in a sealed container in the refrigerator.
