Farmers Market Ratatouille:
ratatouille 4 ppl.
2 eggplant
2 red bells
2 red onions
1 yellow squash
1 zuchini
Dice quarter inch
Add ¼ cup fennel seeds, chopped garlic & sauté til fragrant
2 teaspoons salt
1 tspoon red pepper flakes
2 cans organic tomato paste
juice & zest of 1 lemon
simmer 5 minutes.
adjust salt if needed.
