- 1 tablespoon canola oil
- 1 pound lean ground beef
- 1 small onion, chopped
- 1/2 jalapeno, diced
- 1 can (16 oz) refried beans
- 1 can (14.5 oz) diced tomatoes
- 1 cup Mexican blend cheese, shredded
- 2 green onions, diced
- 2 tablespoons cilantro, chopped
- Tortilla chips, for serving
Heat oil in a large skillet up to medium heat. Cook beef, onions and jalapeno for 8 to 10 minutes, stirring occasionally, until beef is brown; drain well. Stir in refried beans, tomatoes and cheese. Cook 3 to 4 minutes, stirring occasionally, until hot. Serve immediately with tortilla chips. Garnish dip with green onions and cilantro.
