- 2 cups mashed potatoes
- 1 large egg
- 1/4 cup flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup cheddar cheese, grated
- 1/4 cup canola oil or Crisco, for frying
- 1/2 cup sour cream or plain yogurt optional
- 2 teaspoons chives
- 1 tomato, diced
- Salt and Pepper, to taste
Mix mashed potatoes, egg, flour, garlic powder, onion powder, cheese, alt and pepper. Preheat skillet to medium high heat; add oil. (Note: if the mixture is too thin, add additional flour.)
Pour 3-4 tablespoons into hot pan making pancakes; cook on each side for 2-3 minutes. Serve with sour cream or yogurt. Top with chives and tomatoes.
