Banana Pancakes (03.21.14)

  • 2 bananas, lightly mashed
  • 2 eggs
  • 1 tablespoon baking powder
  • 1/4 cup flax seed
  • 1 tablespoon cinnamon
  • Pinch of salt
  • 2 tablespoons coconut oil or butter
  • 1/4 cup maple syrup
  • 2 tablespoons chopped nuts

Mix 1.5 of the bananas and the next 4 ingredients together in a large bowl. Bring a griddle or large frying pan up to medium heat. Add butter to pan or griddle. Spoon 2-3 tablespoons of batter onto griddle or pan making small to medium pancakes. Cook 1-2 minutes per side or until golden brown. Slice the remaining ½ banana. Serve with syrup, nuts and banana slices.
