Chicken, Avocado and Mandarin Orange Salad (10.29.15)

  • 4 cups lettuce, any kind, chopped
  • 1 lb. boneless, skinless chicken breast, cooked, shredded
  • 1 red bell pepper, chopped
  • 1/2 large avocado, halved, thinly sliced
  • 1 (11 oz.) can mandarin oranges, drained, reserved
  • 1/4 cup slivered almonds, toasted
  • Salt and Pepper, to taste

Dressing

  • Juice from mandarin oranges
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 1/4 cup olive oil
  • Salt and Pepper, to taste

Combine all salad ingredients in a large serving bowl. Whisk together dressing ingredients in a small bowl. Pour desired amount of dressing over salad just before serving.
