- 4 cups lettuce, any kind, chopped
- 1 lb. boneless, skinless chicken breast, cooked, shredded
- 1 red bell pepper, chopped
- 1/2 large avocado, halved, thinly sliced
- 1 (11 oz.) can mandarin oranges, drained, reserved
- 1/4 cup slivered almonds, toasted
- Salt and Pepper, to taste
Dressing
- Juice from mandarin oranges
- 1 tablespoon Dijon mustard
- 2 teaspoons honey
- 1/4 cup olive oil
- Salt and Pepper, to taste
Combine all salad ingredients in a large serving bowl. Whisk together dressing ingredients in a small bowl. Pour desired amount of dressing over salad just before serving.
