Smith's Chef Jeff joined us from his kitchen with a recipe for chicken salad, with a Greek twist.
Greek Tzatziki Chicken Salad
1 rotisserie chicken, chicken meat removed and shredded
1 c. plain Greek yogurt
The juice and zest of 1 lemon
1 tbsp. garlic, minced
1 medium-sized cucumber, chopped
½ small red onion, chopped
½ c. cherry tomatoes, halved
¼ c. feta cheese, crumbled
¼ c. kalamata olives, chopped
2 tbsp. fresh dill, chopped ( 1 tbsp. if using dried dill)
¼ c. parsley, chopped
½ tsp. kosher salt
½ tsp. pepper
6 pita breads for serving
1. Mix all of the ingredients except the chicken in a large bowl. Stir to combine.
2. Fold in the chicken and stir to combine. If it the salad seems a bit dry, simply add a bit more yogurt or mayo. Enjoy served in pitas.
